Vegetable Beef Stew or Soup
(You Choose!)
Ingredients:
- 3 pounds grass-fed ground beef (does not have to be ground)
- 2 medium onions, coarsely chopped
- 9 cloves garlic, minced (Garlic Lover’s: just use the whole head!)
- 8 carrots, coarsely chopped
- 6 celery stalks, coarsely chopped
- 1 pound frozen green beans, whole
- 3 14.5 ounce cans whole tomatoes (slightly chopped in can)
- 1-2 cups beef broth (you can just use water)
- 1-2 cups filtered water
- 1 small head of cabbage (or what fits in your pot)
- Sea salt and pepper to taste
Directions:
Brown the meat, onions and garlic. Grass-fed meat will have little fat.
Add the diced tomatoes, broth and water, and bring to a boil. Then add the remaining vegetables, bringing to a boil once again. Reduce to a simmer and cook for 2-4 hours.
If you would like to make this recipe more of a soup, use a very large stock pot and add more broth, water, and canned tomatoes. The boys in our family like the stew and the girls like the soup. I compromise, making the soup but giving the girls all the broth! This will probably ALWAYS be my favorite soup!!! I personally love the whole tomatoes added and slightly chopping them in the can with a small spatula.
You can’t go wrong with soups and stews. Try different vegetables and add fresh herbs. I ix it up based on the season and what I have on hand.
